Red, white and blue-themed events are nothing unique over the July 4 weekend. I wanted to challenge myself by developing recipes that weren’t just blueberries, strawberries and whipped cream (though one had to be, of course).
One dish is an appetizer, two are salads, and one is a dessert. All four would be welcome at any potluck party this weekend.
Tri-Color Potato Salad: OK, some of these potatoes are purple, not blue; and yellow, not white. But all together they do fit in with the red, white and blue motif.
Blue Corn Nachos: It’s easy to make patriotic nachos – just start with blue corn tortilla chips.
Savory Watermelon and Blueberry Salad: Watermelon and blueberries don’t shout “savory salad,” but mixed with feta cheese and apple cider vinegar the fruits are bright and refreshing.
Patriotic Puff Pastry Tart: Puff pastry is like magic, and this dessert comes together magically fast. This dessert is ideal for American flag designs.
